No Andhra meal is complete without a Dal and Rasam. Rasams are so common in South India that we often forget to give them their due recognition. A hot, spicy rasam on a cold day is a wonderful medicine besides the generous pleasure it gives to the taste buds..!Pulusu is a Rasam's cousin, the difference being that Pulusu is rather denser and incorporates some other ingredient too like thotakoora, Amaranth leaves in the present case. Fresh Amaranth leaves are sauteed in a simple temepering and cooked in thick tamarind juice for that balance tangy flavour and inexplainably wonderful aroma.
